One of the undeniable features of holidays like Thanksgiving and Christmas are the leftovers. When it’s time to revisit your Thanksgiving turkey, many people often find themselves simply reheating their bird after the feast. Another simple leftover idea is a simple turkey sandwich- topped with your favorite Thanksgiving side dish. Of course, there’s nothing wrong with that, but if you want to take things to the next level, try these leftover turkey recipes!

Three twists on leftover turkey:

Turkey cranberry wrapTurkey Cranberry Wrap

Turkey plus cranberry on a simple wrap- what could be easier for those Thanksgiving leftovers? A simple and delicious recipe for enjoying your leftover Thanksgiving turkey and cranberry sauce! Super easy and packed with so much great flavor. Everyone is going to love them!

Ingredients:

  • 1/2 cup turkey, cubed
  • tortilla of your choice
  • 2 tablespoons dairy-free cream cheese (more as desired)
  • 2–3 tablespoons cranberry sauce (more as desired)
  • 1/4 cup romaine lettuce, chopped

Instructions

  1. Lay out tortilla and spread a layer of dairy-free cream cheese on top, making a strip down the middle.
  2. Scoop some cranberry sauce on top, covering the cream cheese.
  3. Lay down as much turkey as you want as well as some romaine lettuce.
  4. Wrap up and eat!

Spicy Turkey QuesadillasSpicy turkey quesadillas web

A bit of spice livens up cranberries and turkey while fat-free cream cheese rounds out the bold flavors in this easy dish. You’ll love this recipe!

Ingredients

  • 1/4 cup chopped fresh or frozen cranberries, thawed
  • 1 tablespoon canned chopped green chiles
  • 1 1/2 teaspoons honey
  • 3 ounces fat-free cream cheese
  • 1 teaspoon Louisiana-style hot sauce
  • 1 cup diced cooked turkey breast
  • 4 flour tortillas (6 inches)

Directions

  1. Mix first 5 ingredients until blended; spread over tortillas. Top 2 tortillas with turkey, then remaining tortillas, pressing lightly.
  2. In a large skillet, cook quesadillas over medium heat until lightly browned and heated through, 2-3 minutes per side.

Holiday Turkey HashTurkey Hash 2

Hash is a dish that combines chopped meat, potatoes and usually fried onions. It was developed as a way to use up leftovers. Hash recipes offer flexibility in what they include. It’s a perfect way to use up holiday leftovers in an original and delicious way!

Ingredients

  • ½ cup Sliced Almonds
  • 1 tablespoon unsalted Butter
  • ½ cup Yellow Onion , chopped
  • 2 large Garlic Cloves , minced or pressed through a garlic press
  • ½ cup Red Pepper , finely chopped
  • 3 cups cold cooked Turkey , chopped
  • 1 cup cold Dressing/Stuffing
  • 1 teaspoon Kosher Salt
  • ½ teaspoon Black Pepper , ground
  • 2/3 cup Gravy or Heavy Whipping Cream
  • Garnish: chopped Italian Parsley
  • Optional: batch of Roasted Garlic Buttermilk Smashed Potatoes

Directions

  1. In a large, heavy skillet (dry) over medium-high heat, place sliced almonds. Stir constantly (to avoid burning) until the almonds begin to turn light golden brown; 2-3 minutes. Remove and set aside.
  2. Melt butter in the same skillet over medium heat. Add onions, garlic and red pepper to the skillet and sauté, stirring constantly until the onions begin to become translucent.
  3. Add the turkey, dressing, salt and pepper; stir to mix well. Cook over medium heat, stirring occasionally, until heated through; about 5 minutes.
  4. Add the gravy/cream and almonds to the skillet. Cook until the liquid is absorbed, stirring frequently, scrapping the bottom of the skillet to incorporate the browned bits into the mixture. Allow mixture to sit a few minutes in between stirring to develop a light golden crust. Hash should still be moist when done; about 5-10 minutes.
  5. Garnish with chopped Italian parsley and serve immediately. If desired serve turkey holiday hash over a heaping serving of Roasted Garlic Buttermilk Smashed Potatoes.
